In 2015, at Baylor, Jarrett started his true freshman year as the backup to Seth Russell. He appeared in the first 7 games, scoring 24 of 28 passes for 331 yards and 6 touchdowns. After Seth suffered a season-ending injury, Jarrett took over as the starter. He started his 1st career game against Kansas State and finished the game scoring 23 of 33 passes for 419 yards, 3 passing touchdowns, and 1 rushing touchdown. Further, in his 2nd career start, Jarrett injured his back in the 1st quarter, but he remained in the game. He scored 16 of 27 for 257 yards, 2 touchdowns, and 2 interceptions. Later, due to his injuries, Jarrett missed the 2015 Russell Athletic Bowl. 

Jarrett then transferred from Baylor, as there was a sexual abuse scandal that occurred at the school, and he was finding it dissatisfying to back up quarterback Seth. He then spent 1 semester at McLennan Community College and later announced that he would transfer to Auburn University. He announced this via his Twitter account on 10th December 2016. On 14th August, Jarrett was named Auburn’s starting quarterback for the 2017 season. He led the team to an SEC West Division Championship after defeating Georgia and Alabama. Further, on 4th December 2018, he announced his final year of eligibility to forgo and declare for the 2019 NFL Draft. 

In the 2019 NFL Draft, Jarrett was selected in the 4th round with the 133rd overall pick by the New England Patriots. He signed a 4-year deal worth $3.15 million, which included a signing bonus of around $634,000.

Later, in March 2020, Tom left the Patriots, and Jarrett was seen as his potential successor for the coming season. However, the team signed former MVP Cam Newton, who replaced Tom. Cam was announced as the season’s starting quarterback, while Jarrett became the 3rd-string quarterback behind Cam and 2nd-string backup Brian Hoyer.

In week 4, Jarrett was brought in during the 3rd quarter to complete the game, as Cam tested positive for COVID-19, and Brian Hoyer had an ineffective performance. Jarrett threw his 1st career touchdown pass but was also intercepted 2 times, and the Patriots lost 26–10. He was subsequently promoted to the 2nd option ahead of Brian.

Although Cam remained the team’s starter for the rest of the season, Jarrett made relief appearances in Week 7, Week 13, and Week 14. His final relief appearance came in Week 16 after an ineffective performance from Cam. Entering the third quarter, Jarrett struggled during the 38–9 loss. He recorded 4 of 11 passes for 44 yards and also converted 3 first downs.

After the off-season back surgery, Jarrett began the 2021 season on the team’s reserve. On 9th November, he became activated ahead of Week 10 against the Cleveland Browns. He was named the 3rd-string quarterback, ultimately not taking the field for the entire year.

Further, in the 2023 NFL Draft, on 13th May 2022, Jarrett was traded by the Las Vegas Raiders. The trade reunited him with Raiders head coach Josh McDaniels. Jarrett was named the 2nd option to start quarterback Derek Carr on 30th August. On 28th December, with 2 regular season games remaining, Jarrett was named the starter for the 1st time in his career after the team benched Derek.

The score gave the team a 24-14 lead over the San Francisco 49ers.
